CAJUN STUFFED JALAPENO PEPPERS

1 lb crab meat
1/2 cup chopped onions
1/2 cup chopped bell peppers
1/8 tsp cayenne pepper (optional)
1/2 stick butter
1 cup grated Velveeta cheese
1 (10-1/4 oz) jar whole jalapeno peppers

Sautee onions, cayenne pepper and bell peppers in butter until soft. Add crab meat and cook until crab meat and seasonings are mixed and heated through. Set aside to cool until mixture can be handled with the hands. Using gloves, slice peppers in half lengthwise, removing stems and seeds. Rinse with hot water in a collander. Drain on paper towels. While crabmeat mixture is still warm, mix in the cheese. Stuff this mixture into peppers shells. Arrange on a platter. Can be served at room temperature or heated in the microwave. Serve with tortilla chips and PLENTY of your favorite beverage!
