THE ULTIMATE PUMPKIN PIE

1 1/2 cups pureed cooked or canned pumpkin
3 tbsp. unsalted butter, melted
1/2 cup sugar
1/4 cup maple syrup
1 tsp. ground cinnamon
1/2 tsp. grated nutmeg
1/4 tsp. ground cloves
3 eggs, separated
1/2 cup milk
1/4 cup heavy or whipping cream
1 (10 in.) pie shell
Sweetened whipped cream

Preheat oven to 350 degrees. Combine pumpkin, butter, sugar, maple syrup, cinnamon, nutmeg, cloves, egg yolks, milk and cream. Mix thoroughly. Beat egg whites until stiff but not dry. Fold them into the pie mixture. Pour mixture into pie shell and bake about 50 minutes or until a toothpick inserted in the center comes out clean. Cool. Serve with sweetened whipped cream.
