Depression Cake
M. Kirkpatrick - Haddon Heights

2 cups sugar
2 cups strong coffee or fruit juice
1/2 cup shortening
2 cups raisins
1 apple, peeled and grated
2 cups flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves
1 tsp. nutmeg

In a large saucepan simmer the first five ingredients for 10 minutes, stirring occasionally. Cool for 10 minutes. Blend together the remaining ingredients and stir into mixture. Pour the batter into greased 9"x13"x2" pan or 2 loaf pans. Bake at 350 degrees for 25 to 35 minutes.
