CALAMARI SALAD

2 lb cleaned squid
2 tbsp Bertolli olive oil
3 cloves garlic
1-1/2 lemons, juice of
1/2 cup fresh parsley, chopped
salt to taste

Buy fresh squid already cleaned and simmer for 30 to 40 minutes in just enough water to cover. Test squid with a fork; they should be very tender. If not, simmer longer. When finished, rinse in cold water and dry. Shred with fingers or cut into thin strips. Put garlic through a press (or mince) and place in olive oil for 30 minutes. Add to squid and toss. Add lemon juice and parsley and toss again. Prepare this two to three hours before serving so squid can marinate in the dressing. Serve with bread and a salad.
