Tony Lazzaro - Audubon

1 lb filleted cod
3 or 4 potatoes, peeled and cut into bite-size chunks
1 medium chopped onion
2 or 3 cloves chopped garlic
1 stalk of chopped celery
2 tbsp olive oil
16 oz tomato sauce
2 tbsp parsley
2 tbsp balsamic vinegar
1 1-1/2 box raisins (remove raisins from box and soak in water at least 15 minutes)
1 tbsp basil
10-oz box of frozen peas
salt and pepper to taste

Microwave potatoes 3 times for 2 minutes each time; mix potatoes thoroughly between each microwaving. Meanwhile, in a large pan, sautee onion, garlic and celery in olive oil for about 10 minutes. Add tomato sauce, parsley, balsamic vinegar, raisins, basil and cod. Cover and simmer for 20 minutes. Microwave frozen peas, following directions on package. Add peas to pan and stir. Salt and pepper to taste. Serves 2.
