4 boneless fish filets (flounder, orange roughy, etc.)
6 medium mushrooms, chopped
1/2 cup onion, chopped
1/4 cup locatelli or parmesan cheese, grated
1/2 cup Italian-flavored bread crumbs
salt and pepper to taste
extra bread crumbs
olive oil

Preheat oven to 350 degrees. Lay fish filets on board. Mix all ingredients (except oil) in a small bowl to create the stuffing. Brush filets with oil. Place a scoop of stuffing on each filet, dividing equally among the four. Roll up, jellyroll-style, and secure with a toothpick. Place in square baking dish. Brush tops of filets with oil or butter and sprinkle with more bread crumbs. Cover with foil and bake for about 45 minutes, or until fish flakes easily. Serve with rice.
