Chocolate Mint Cookies

1 1/4 cups butter, softened
2 cups sugar
2 eggs
2 tsp. vanilla extract
2 cups all-purpose flour
3/4 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
32 round thin-chocolate mint patties

Preheat oven to 350 degrees. In mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt. Gradually add to the creamed mixture, beating until well combined. Drop by tablespoons 2" apart onto ungreased baking sheets. Bake for 8 to 9 minutes or until puffy and tops are cracked. Invert half the cookies onto a wire rack. Immediately place one mint pattie on each, then top with remaining cookies. Press lightly to seal; cool completely.
