1 12-oz package of small flour tortillas (10 tortillas)
Canola oil (enough to lightly brush on tortillas)
4 cups (1 16-oz bag) grated cheese (cheddar, Monterey Jack or Mexican combo)
ham, thinly sliced (approx. 1/4 - 1/2 lb)
2 very ripe mangoes (thinly sliced)
Cilantro (finely chopped)

Lightly brush both sides of each tortilla with canola oil to prevent drying. On each tortilla, lightly sprinkle cheese to within 1/2 inch of the edge. Cover each tortilla with slice of ham. Place thin mango slices over ham, and sprinkle mango with cilantro. Cover with second tortilla. Grill one minute on each side or less time if necessary to avoid burning. Cut into wedges and serve immediately.
