MENDOCINO CHICKEN

1 lb chicken cutlets
Dijon mustard
grated parmesan or locatelli cheese
1/2 cup chicken broth
1/2 jar capers
1/4 lb butter

Brush chicken cutlets with Dijon mustard, dip in grated cheese. Place in baking pan. Pour chicken broth over and bake at 350 degrees for 45 minutes. Melt butter, add capers, and cook for several minutes. Place chicken on plate, and pour butter and capers on top. Serve with tossed salad.
